My cast iron skillet burned last night & now half of the black is gone. How do I get the black back?

I’ve been having some problems with the cast iron skillets lately. When I cook with water in them, the water turns black. I do know how to clean them properly and do every time. I noticed that the pan that got burned is rusty where there is no black coating. Most of the coating got burned off the bottom and the rest is flaky. How do I restore my pan to it’s former beauty?

re “season” it. simply wipe with a paper towel dipped in veg. oil. much like greasing a baking pan. then heat (until it smokes) and allow to cool. repeat if you want. eventually it will re season. also the oil will prevent the rust. just using the pan to cook will cause it to re season the best. just put a little oil on it each time you use it.
btw cast iron pans do not have a “coating” on them (ie teflon etc) this is seasoning or just plain old used residue. you should not “scrub” a cast iron pan with steel wool or cleanser or any other harsh abrasive. if you have a very stubborn “stain” (like say some burned on food) just use easy off oven cleaner on it. do not scrub the heck out of it.
